Kuro-Uchi finish : By tempering the blade's surface becomes black color, and craftmen polishs and sharpend the edge only. Except edge craftmen leaves the black surface on purpose to add old flavor. Because craftmen leaves black surface, the black part will help blade to prevent rust.
