YS-901 Minamoto Kotetsu Gyuto 185mm
This Gyuto knife is called “Kengata” its blade is a little bit longer than thier Santoku kitchen knife.
The core material of the blade is made from Swedish Sandvik 19C27 stainless steel that contains a high percentage of carbon. After heat treatment the steel is characterized by a very high hardness and good wear resistance.
Sub-zero treatment was done on all YS series kitchen knife’s blade to improve wear resistance.Each blade is carefully hand sharpened by craftsmen in Seki and polished to a razor edge.
