Honsho-Kanemasa E-series knives are one of our original product lines.
The blade itself is carefully hand-sharpened by skilled craftsmen in Seki-City, the place where people called it a city of knife making.
The blade material is the finest grade high carbon steel on the market that gives them greater cutting performance. The handle is made from black laminated wood and its durability is excellent. Full tang construction.
The Yo-deba is the Western version of the traditional Japanese Deba. It can be used for cutting fish meat with bones, so the blade is relatively thicker and heavier than regular Gyutou knives. However, it does not suit well to cut deep-frozen foods, shell of crabs and thick bones. FYI.
