The Nakiri knife is a Japanese style vegetable knife, which is well suited for home use.
Nakiri knive has a straight blade edge suitable for cutting all the way to the cutting board without the need for a horizontal pull or push and also designed to make thin slice of vegetable so the blade is very thin therefore not suitable for cutting meat.
The core material of the blade is made from Swedish Sandvik 19C27 stainless steel that contains a high percentage of carbon. After heat treatment the steel is characterized by a very high hardness and good wear resistance.
Sub-zero treatment was done on all YS series kitchen knife’s blade to improve wear resistance.Each blade is carefully hand sharpened by craftsmen in Seki and polished to a razor edge.
